Well, first he went to Egypt with his parents. How long exactly he stayed there we are not sure of. But the Bible says God sent Yosef (Joseph), his earthly father, a message there in Egypt when it was safe for them to come back to Israel, and that they did. He lived with his parents. According to the Bible his parents had more children and it clearly implies his father died before he went into open ministry. He went up to Jerusalem for his Bar Mitzvah. And the bible goes into some detail on that where he sat with teachers in the Temple and astounded them, meanwhile his parents were on their way home thinking the was following right along with that group and had to go back for him. Depending on how long Yosef had been gone he would have been the head of his mothers household. Though some (Catholic types) dispute the existence of literal brothers and sisters, he still would have been responsible for providing for his mother. If, indeed as Scriputure says, he had other younger brothers and sisters, as the firstborn son of that family, he would have been very involved in his sisters marriages, and his brothers career's. This is played out (evidenced) by the way even at his death he provided for the ongoing care of his mother Mary by entrusting her directly as "mother" to a beloved disciple who in that culture understood exactly what was then required of him provision wise. Up until Jesus' brothers were old enough to fill in for him, he could not have left her (and or the whole family) unprovided for even to begin his ministry. That may explain why he began so much later than we would expect. If he had to help his mother become somewhat finanically stable (an uncommon thing in that setting), and sisters to facilitate the marriages of, all in place of Yosef, it makes perfect sense that it took him until age 30.
