I think it is Medusa's head becase it was then put on Athena's sheild afther he gave her back his sheild and Medusa's head. I think that is what it is.

I wouldn't say that Perseus has any obvious symbols but my guess is that Pegasus is best affiliated with Perseus because Pegasus was born when Medusa was slain by Perseus. Pegasus sprang from Medusa's blood. I gave it a shot :-)
A symbol is something which stand for a god or a person or similar. It is not the same thing as a well-known trait of somebody. Medusa was known to have snakes for hair. That does not make snakes symbols for Medusa. In this sense she does not have a symbol.
