Utah's highest elevation is 13,518 ft, and its lowest is 2180 ft, making Utah about 2.15 miles from top to bottom.

I strongly suspect, however, that you are more interested in Utah's length from north to south than you are in its height from top to bottom. Between Utah's northern and southern borders is 346.3 miles.
