How should I surprise my daughter with a horse?
This depends really on your specific situation. Many parents simply wait until the child is asleep or away at a friend or relatives house then bring the horse to the stable the child rides at and place a bow on it and wait for the child to find the horse. Other times you may be able to do a 'treasure hunt' type game with the horse being the 'buried treasure'. Guessing games can be fun for the parents, and of course a traditional version of giving a horse to a child is to give a Birthday or Christmas present consisting of a halter for the horse with a picture attached to it.

How do you bridle train a horse?
Bridle training a horse can take a long time. You can start the horse out young however and get them used to it. While the horse is still a foal (If you have the horse while it's that young) get it used to having a leather foal halter on and lead it around gently. As the horse gets older, around a year old or so you can place a bridle (Without the bit) on it's head and begin to lead it with the bridle on. After the horse accepts this you can introduce the bit, a very gentle snaffle type bit is best, give the horse treats while it has the bit and bridle on at the same time. Again once this becomes second nature to the horse to have a bridle and bit on you can begin training the horse to follow the pressure from the bit and how to turn, move forward, and backwards. You'll need a helper for this portion of the training. Eventually the horse will accept the pressure and you will have a horse trained to the bridle.
Good question! Every once in a while a wild mustang stallion can in fact take someones domestic mare. Sometimes out of a paddock or the mare may wander off and is herded into a wild band by the ruling stallion. I'm not sure if anyone has ever done a study to see how often this happens but I believe it to be a rare occurrence You can always get your mare back if you want to track her down. If a stallion took one of my mares I most certainly would try to get her back.
