They didn't go to a school at all.

Their education would start either in a church or by thier mother or wet-nurse where there would learn to read (but not write) then by the age of seven a boy's father and his friends will teach him to ride and hunt, build fires, look after the horses etc: to build up the boy's frame and make him stronger. If a man has been knighted are you required to call him a sir?

Yes but not in the way you would call a teacher your boss or a military officer "sir"

In those curcimstances saying sir is just a plesentry however when addressing a knight it is their title; you cant be born to be a knight unlike other titles such as Baron or Earl you have to be raised to knighthood and have to earn it.

If you were to speak to a knight the proper form would be to say "Sir" and then their first name so if Sir John Fastolf asked you to fetch the wine you should reply

"Yes, Sir John"

How were knights trained?

Young Noble boys who showed promise started knight training around 7 or 8 years old. As they approached their teens they were made Squires to a knight. Some stayed and others would leave the "program". A young man became at knight at 21. An interesting bit of trivia about knights is that they were not allowed by law to wear rings.

Many of the early knights were little more than thugs for the local Nobility and were more like the mafia than the shiny knight in armour that we think of from stories. It wasn't until the Church stepped in and made the knights vow before relics of Saints that they would no long harm or kill widows, children or the elderly that some order was brought to the knighthood.
