Go to "Single player" and then pick the "Grand prix". Win every cup in the grand prix and you CANNOT get at least second in any race. You also need to make sure you get a lot of seconds ahead of the computers.

You get stars for tournaments. Not individual races. At the end of a tournament, it'll show rank, which could be C, B, A, Star, 2 Stars, or 3 stars. You can also see what rank you got on a tournament, by looking in the bottom right corner, next to where your trophy is. If you're trying to get Rosalina, without Super Mario Galaxy, then you need to get at least a 1 star ranking on each tournament.

There are three princesses- Peach, Daisy, and Rosalina. You can play with Peach from the beginning, but you need to unlock the other two. To get Daisy, Finish first in the 150cc Special Cup. To get Rosalina, earn 1 star or higher in all Mirror Cups or race in 4,950 races.

Win the cups that you already have on grand prix mode.

Birdo cannot be unlocked in Mario Kart DS. Sorry :(. She is in Mario Kart: Double Dash!! and Mario Kart Wii though. She is only unlockable in the latter. The easiest way to unlock her in Mario Kart Wii is by completing sixteen races in Time Trials.

No, if you uninstalled the Homebrew Channel and BootMii, there is very little that can help you if the Wii bricks due to a "full brick" from an update, etc. except for sending it in to Nintendo. Uninstalling the Homebrew Channel and BootMii will not brick your Wii, however.
