You use fences down from the ceiling in any style you like. EDIT: I used 2 fence pieces (either nether or normal fence) from the ceiling, then arrange fence pieces on all sides of the lowest fence post so you get a cross shape suspended from the ceiling. Then attach fences to the ends of that '+' so you make a larger x and put candles on top of all the uncovered posts. Then place a smaller x attached below the first, without candles to create a sort of triangular formation. It's easier to show a pic but I can't.

This is probably the result of mobs walking around you. If you do not want to hear them, be sure to change your difficulty to peaceful.

Any patch of dirt with no opaque block above it (so only air, leaves etc) will grow grass after a while. If any block is covering it, blocking out the sun, then the block will remain dirt.

That sounds like a user map like SkyBlock. Knowing the seed will only give you the original terrain that was generated before SkyBlock's creator made many changes to the land, to create the SkyBlock.

They are dropped from leaf blocks. Best way to harvest them is to remove all the wood and the leaves will decay naturally, dropping saplings and apples.

You can use commands at any time by pressing 'T' then a backslash ('/') followed by a command, but unless cheats have been enabled in SSP or if you are a server OP (Operator) then you cannot use many commands.
