When roasted this covering contracts. That is the little brownish stuff that falls out when you open it.
Lutein is actually used to inhibit the energy production in plants, by interfering with chlorophyll. I'm not sure why it is in the kernal. If I were to bet, I would hypothesize that it is to slow the decay after the fruit has fallen.
