8 gauge was never a common shotgun, and today is virtually nonexistent. The switch to smokeless powder and the demise of commercial hunting pretty much did away with all gauges over 12.

What is a used Mears Arms Company Double Barrel 12 gauge shotgun worth?

I'm no expert, but I believe that Mears shotguns, at least some of them, are Belgian made. One I am familiar with has Damascus-twist barrels and exposed hammers. They are representative of a type that was sold during the first part of the 20th (and latter part of the 19th) century. They were mainly mass produced by a number of European firms for export. Unless they have special features or have a documented noteworthy history (owned by a famous person, used in a historical event, etc.) they are classified as "wall hangers". That is, they look cool over the fireplace (although I wouldn't recommend displaying an unsecured firearm), or are just interesting artifacts. Naturally, they are priceless if owned by an ancestor or have family ties. Like any old gun, they shouldn't be fired with modern ammunition (or fired at all) until checked by a qualified gunsmith. This is especially true if they have Damascus barrels. That can be determined by markings on the barrels, or if the barrels display a swirly, ormamental texture in the metal. Most were designed to fire blackpowder ammunition which has a much lower pressure that modern smokeless ammunition. Take this for what it's worth. There are always exceptions. What is the difference between an centerfire and a rimfire rifle?

The difference between rimfire and centerfire rifles would be the type of cartridge they use.

Rimfire cartridges are an older design. In a rimfire cartridge, the priming compound (impact-sensitive substance that produces the spark to ignite the gunpowder) is located inside the hollow rim of the cartridge case. The firing pin crushes the rim against the chamber mouth to fire the cartridge.

In a centerfire cartridge, the priming compound is located inside a small metal cup called a primer, which is made separate from the casing. The cup is inserted into a hole in the center of the base of the cartridge. The firing pin strikes the primer crushing it against an internal anvil to produce the spark.

Rimfire cases are made of soft brass so that the firing pin can crush the rim. However, this makes them unsuitable for higher chamber pressures. Centerfire cartridge brass is much harder, because only the primer cup needs to be soft.

With the switch from black powder to smokeless powder, higher chamber pressures became commonplace and rimfire cartridges became largely obsolete.

The most common rimfire cartridge in use today is .22LR, popular for target shooting and pest control. Due to low cost and low recoil it is probably the most popular cartridge in the world.

Each shotgun will perform a little differently but as a rule the answer is "yes" and in theory the result should be a little tighter pattern than with a larger choke at the same distance. However, one caveat to that answer is that the tighter choke may in some cases cause sufficient deformity of the lead pellets so as to disturb their flight enough to enlarge or distort the pattern, especially at longer distances.
