I tried and tried internet posts for this and never wanted to pay for a program to help me get my Outlook Notes to my iPhone 3GS nor could I get iTunes to synch the two. So here is what I did, simple (and lucky) fix.
Go to your Outlook Notes application. When you are there, on the left side of the screen it says My Notes...under that is says:

Handheld Synchronization
I went to my Notes area. All my notes show up on the right side of the screen, showing me all my Notes. I selected them by holding the control or the shift key, then hit Ctrl+C to copy all my Notes.
Then I clicked on Handheld Synchronization, the entire right side is blank (nothing in my Handheld Synchronization folder.
I paste (using Ctrl+V) - and BOOM, all my Notes are in the Handheld Synchronization and the next time I synch with iTunes, they show up on my phone.
In iTunes, with my PC connected, I make sure that I click on my iPhone on the left side of screen, under info tab make sure that done below the Synch Notes with Outlook is checked.
You can use various methods to sync your iPhone 3GS to Outlook email. I am going to share two methods: iTunes and Microsoft Office 365. With the help of these methods, you will be able to sync your Outlook email easily to your iPhone. Sync iPhone 3GS to Outlook Email Using the iTunes • Firstly, connect your iPhone device to your computer. • Then, launch iTunes by tapping on the option. • After that, select the iPhone in the Devices section on the left side of your PC. • Now, check the Sync contacts and then click on Outlook. • Also, check the Calender with the checkbox and choose Outlook. • In addition, click on the Sync option in the iTunes lower right side. • Finally, the sync process of Outlook to iPhone will be complete. There are 2 possible ways of doing this. You can either sync your iPhone Notes with iTunes then sync your other iPhone or use iCloud in ios5 to transfer the notes. Hope this helps
Cheat it! If you have an Yahoo account, there's a way to link all your contacts from Outlook to Yahoo and then sync with iPhone automatically... Sign up Plaxo for free, install outlook add-in and make it sync with your yahoo account. Once it is done, you now can make iTunes sync straight with your Yahoo! Another solution is to register on Funambol and use the utilities they provide... one of them is to sync with outlook. With Funambol you can update your contact using the iPhone's Safari. If you do not want to install any additional software, follow these instructions, search for "sync iPhone with Yahoo" for info. But if you don't want to sync with the cloud, then another option is third party software like Akruto, which can sync Outlook with iPhone.
You can sync contacts to Google, and then, using a sync tool like AweSync (www.awesync.com), sync them to Lotus Notes.
1. As long as you have outlook 2003 or 0utlook 2007 it will sync automatically (as long as you haven't changed any of the outlook default settings). Just plug it in and iTunes will do all the rest. 2. As long as you sync your iPhone to itunes you won't lose any of your contacts or calendar appointments. itunes will do a full back up and then completely wipe your iphone. Update to iOS 4 and use the gmail sync for notes. It will upload all your notes to your webmail with a "notes" label
IF you have a computer and have installed itunes on it (no duh you wouldn't have apps with out i tunes:P) all your apps, videos and songs SHOULD be saved on i tunes so just sync the iphone 4 2 itunes and there you have it. :)
Lotus Notes->Companion Link DoubleLook->Outlook->Intellisync->Yahoo. messy but essentially works. .....me too have the same doubt....
you can not reverse the sync
If you want to get an email on both Outlook and iPhone, then you can add both accounts using this simple procedure. Here is the procedure i used to sync both my accounts.
