On your iPhone, open the Calendar app. Next, tap on the "Calendars" button and tap on the little blue arrow next to one of your listed iPhone calendars. Finally, tap on the "Delete Calendar" button.

Also, you can delete iPhone calendars directly from your PC using third party tools such as: http://www.copytrans.net/copytranscontacts-calendar.php

Note: you cannot delete calendars on your iPhone which are sourced from CalDAV or Exchange protocols (such as Google or Yahoo calendar).

You can delete synced calendars at their source. For example if you're syncing with iCal you can delete the calendar in iCal and it will be gone off your iPhone after the next sync.
