Canceling via software (slider on iTouch or cancel in iTunes) the sync will complete the file it is currently writing and terminate.

These are typical, most case scenarios. There are very slight (like .0001%) chances of major data corruption and freezing issues. Still the device would work, just have to erase/restore.
if the info is not on the computer then it will not sync with the ipod , itouch ,iphone there is no way yet of restoring the ipod of this mess

if its completely disabled for like a passcode or something then you just have to sync it or plug it in to the first apple u use to sync stuff on it
you have to transfer all you current content to the computer and then you can sync... on itunes go to file and choose the option that say import purchases or something similar.
