While Tennessee is located further north, it is still considered part of the Southern Regional Cuisine. Tennessee isn't known for any particular dish that is "just theirs" (like Philly have cheesesteaks, Hawaii having Poi, etc.) Tennessee is pretty well known for their BBQ--especially the Memphis area with their "Memphis Style BBQ"--in which the meat is coated in a dry rub of assorted seasonings and spices and then either smoked or grilled. Their BBQ Sauce is traditionally made with a tomato base (a red sauce) and has vinegar, as well as other seasonings. It can also be sweet. Aside from their BBQ, Tennessee tends to adhere to traditional southern menus: fried fish, hushpuppies, cornbread, sweet tea, grits, fresh vegetables, potatoes, gravies, etc. Sweet tea is also quite popular there, as in the South.
