One example might be Einstein, a German Jew by ethnicity. He was reportedly good at math and physics, and wrote some notes on a napkin we now call the theory of relativity. There's probably hundreds or thousands of similar individual examples from that era in Math, Science, Medicine, and beyond. More recently, many of the cancer researchers I work with (I'll guess ~ 50 % or so) in Boston, MA originated in countries other than the US. Would you call those "ethnic" (?). If the question is really focused on the "Group" rather than the individuals' contributions, the answer might shift focus somewhat toward art, literature & other cultural contributions. Examples - Opera from Italy, Celtic singing from Scotland, Yoga/Meditation from the Asia region, perhaps mostly India. Sorry I'm not better informed in this arena.
