Why not? I am currently switching over from dressage to western on my Dutch Warmblood. It takes time to retrain but it can be done. Just don't let any dressage training go to waste. It is very helpful in any discipline.
They are used for ranch work and riding. Actually, mustangs were not bred. They are feral horses (like wild horses, only they descend from domestic stock from many, many decades ago so they are technically feral). Mustangs are used for just about everything. If you watch videos from extreme Mustang Makeover, you will see horses being used for all types of western and engilsh riding: dressage, reining, Western and English pleasure, ect. However, most mustangs are used for Western.

when you ride in reining, you do a series of spins and circles. when you ride in reining and do a circle, its a figure 8 type pattern, although you do about 3 circles on the right and 3 on the left, its still a figure 8 in the end. you can also compare reining to figure skating, its very similar. i know this because i compete in reining.
The most popular Western sport is reining. Reining is when the horse and riders go through a series of predetermined movements and courses in a lope (or canter, as it is called in English riding). It is judged on how subtle the aids are and how well the pair complete the course.

It could be said that dressage is better than western riding because dressage emphasizes balance and communication of horse and rider. It is in fact very similar to the western sport of reining, which requires the horse and rider to ride a pattern before a judge in the same way dressage does. The movements required for reining are slightly different from those of dressage, but the idea behind the two sports is the same.
Reins are the leather straps that run from the horse's bit (or bridle) to the rider. The rider uses them to control and direct the horse. "Rein" can also refer to reining, which is a Western discipline where horses complete patterns that include sliding stops and spins.
