Good horse hay will be green and smell fresh or sweet. It shouldn't be dusty or have a lot of debris in it. Typically a bale will feel 'light' for it's weight and if dropped on end it should bounce. The overall color and amount of leaves to stems ratio will vary according to which cutting it is and how long ago it was cut. If it was stored outside it may appear yellowish or brown, but should still be green inside.
