There are two terms, the general term for an animal or bird sitting on eggs is called incubation (the animal or bird is said to be incubating the eggs). More specifically for hens the process is called brooding and the hen is said to be broody.

A hen, especially a Silky or Cochin can go "broody" about every 4 months. Most chicken breeds will not do this, and some never brood.
