It is called a trunk and they use it to feed themselves as they are very large, heavy animals so having a trunk makes it easier to get food out of high up or awkward places. They can also fill it with water and use it to wash themselves or give themselves a drink.

Their long "nose", or trunk, is used to bring food and water to their mouths (which, with their height and tall legs, would otherwise be difficult if the food/water was not directly at mouth level). The trunk became more elongated over time through droughts, etc. when food became scarce and the elephants needed to be able to reach further up the tree to get leaves. Also, it serves as a protection as elephants don't have to bend over like giraffes at the watering hole, therefore they are less of an easy target for predators.
