Cats personalities come from several things: if you get a cat from the pound, it has likely been traumatized early in life. this is not good. it means the cat has gotten a bad feeling about life from and early age. this means they are likely to be more cautious or sometimes, if the traumatization was very bad, mean and defensive. this would occur because they already had a bad experience with humans and think they are all bad. if your cat is raised by a nice mother, then it is likely to be more playful, confident and pleasant around humans because, being young, it has no reason to hate or fear humans. other, more specific personalities come from genetics and tiny differences and how the individual cat is raised.
If you mean they're acting strange, like ornery, then maybe they got traumatized on one of their outings. Unless your cat never goes outside. Maybe you traumatized him. Did you just get another cat? If so, that's probably it. Cats don't like new cats encroaching on their territory.

As to why cats sometimes knead, (when they look like they're running in place if they are de-clawed or when the pull at the carpet, a blanket or your tummy if they have claws) this is a vestige of when they were kittens and were still nursing. In order to get more milk from a mother cat kittens will knead the area around her teat while they are suckling. This helps the flow of milk to the teat and enables them to consume more. Once cats grow up they sometimes still do this just as a comfort activity, perhaps it reminds them of mom.

Nice nasty is a person who acts all nice and perfect on the outside but really harbor some horrible personal traits and habits. For example, they might like to cook large portions of food and give it away, but actually they use the food as a control mechanism. They like to give you dessert you didn't ask for so you can say, oh great, pecan pie, and think they are the greatest when you really wanted a brownie and some ice cream. In my personal experience and opinion, I believe at the heart of it, nice nasty people are people who act nice so they can influence others into accepting things their way. They are usually really nice to people they don't know, but quick to make negative remarks about any or everything in private. Honestly, I'm speaking of my grandmother, and I'm not even sure if that's what nice nasty means, but every time I think of her this phrase comes to mind. Don't get me wrong I love her and she's sweet and nice and all, but at the same time, she wants everything her way and is nice as long as they are. But she gets upset and nasty when they aren't. No middle ground. Either nice or nasty.
