Yes, proteins are formed from amino acid monomers. The OH group on one end of the amino acid bonds with the hydrogen group on the other end to form a water molecule. Then the peptide bond forms (carbon-nitrogen-carbon)

You can call proteins as polymer. But then proteins are not formed by chain of single amino acid. In case of human, you have twenty types amino acids are there, attached in a chain. The number of amino acids vary in different proteins.
