Never tried it in brownies, but i did it in Chocolate Chip Cookies and they came out amazing! I would try doing 1/2 olive oil, 1/2 regular oil first, and if that works, i would try fully switching the oil next time.

yes if you want ur cake to taste a little peanutty. but peanut oil wuldnt really be great if u wanted a low fat cake coz peanut oil has more fat in it than normal oil

You can fry with peanut oil but i would not recommend cooking with it olive oil or grape oil is the best.
