Hi there mushrooms can be seen growing on rocks but not through them the mushroom has tiny roots which allow it to grow in very shallow soil eg a layer of soil on a rock , this means they can be easily knocked off.

The Lithophytes Orchids grow on rocks and stones, they can root themselves in the cracks and crevices of the rocks which can appear as growing out of said rocks, root systems are incredible strong and can crack or break fissures within rocks, stones, cement, etc.

Because rarely, some sand rises to much more than a metre above the ground, and since the harder layer is on top and erodes slower than the softer one, it formes a ''V''. :)
