When Pizza is made the ingredients have a certain amount of moister...and it is spread out through the ingredients..as well as condensation forming as you place it in the freezer.....but as it freezes the molecules of water tend to attract each other and ice will form...think of tiny glaciers. If you thaw pizza before cooking this ice will turn into a big watery pond...thus soggy pizza crust even before you start cooking.
