Well, you can dice them and put them in a pan with green beans (canned or fresh). Sauté them with salt, pepper, and garlic and herbs. It is great for you, belive it or not, and it's taste taste DA BOM! Try it!

I've found in cooking that pimentos can be difficult to incorporate into a dish. The main places I find myself using them are in Mediterranean dishes, salads and dips. Many good hearty chip dips are improved by the addition of pimento peppers.
If you wish to serve something more uncommon, try finding whole peppers and stuffing them with various fillings (A personal favorite of mine is cream cheese, smoked salmon, diced green olives and jalapenos). This recipe tastes the best in the more mild and sweeter varieties of pepper.

Depends on which kind of pimento cheese you have...
If you have a jar of pimento cheese spread which contains (Cheese, mayonnaise & pimentos) then the shelf life is 8-10 days.
If you have the sliced pimento cheese (loaf) then the shelf life is 4-5 days as sliced cheese tends to dry out..

Pimento (or Pimiento) seeds do NOT look like peppercorns. That is incorrect. Pimentos are actually just a form of sweet pepper that are smaller is size than bell peppers, are typically either round or conical in shape, and have really thick flesh. Their seeds look identical to the pepper seeds you find mixed in with a jar of red Chile pepper flakes at your local pizzeria.

I know, everywhere you look the substitute for green bell peppers is red or yellow bell peppers, and vice versa. Not very helpful if you don't like them or are allergic. It depends on what you are using them in. I use pimiento if color and flavor are needed, but I don't really like pimiento. Zucchini or fresh red onion in dips, broccoli in soups or stews. I'd like additional ideas myself!
