Home made chips, however, are often fried in lard -- the traditional choice in the mid-20th century. In fact, until the 1950's bacon grease was the primary staple cooking lipid used at home.
Just because it's made at home doesn't mean the homemaker has access to better produce nor is using the most current nutritional best practices.
