Which European power won control of Canada?

Once the British acquired control of Canada from the French, they never ceded control to any other European power. Originally, most of Canada was French. The dominion of New France was centered in Quebec but included French claims to the Ohio and Mississippi River valleys. After the fall of Quebec in 1759, the French and Indian War concluded with the British takeover of Canada in 1763 and the sovereignty of Spain over the lower regions of the Louisiana Territory. France regained control of Louisiana in 1801 and sold it to the US in 1803.

Who was the man who changed Britains fortune in the war with France?

William Pitt is credited with Britain's victory in the French & Indian War. Pitt became the British Prime Minister in 1757 and significantly increased British military resources in the colonies at a time when France was unwilling to increase it's limited forces in 'New France' (North America). France was already fighting in Europe, and had concentrated its forces against Prussia. Under Pitt's guidance, from 1758 to 1760, the British military conquered New France, and captured Montreal in September 1760.

What were Quebec's demands?

None. Remember that the colony of New France had been abandoned by France following the 1759 defeat of the Montcalme-led French forces at Quebec by the British forces under Gen. Wolfe. The huge area of the Maritimes and old Quebec were run under British law from London as a colony. Because of unrest in the 13 colonies to the south and fear of revolt the British government were on the horns of a dilemma: how little could they concede the French without incurring hostility from the Puritans. Because of this dilemma, the French were able to retain their freedom of language and religion.
