I don't know if I would say that carrots guard your health but carrots are a source of vitamins, phytochemicals or plant chemicals, minerals, fiber and water. These ingredients help to nourish and keep the body strong. For example, if you ate 8 small baby carrots, you would get about 80 calories. In this serving you would also get calcium, iron magnesium, phosphorus, potassium, sodium, zinc, copper, manganese, selenium, vitamin C, B vitamins, a lot of vitamin A and plant chemicals -- alpha carotene, beta carotene, lutein and zeaxanthin. Most of these are in small amounts except for the plant chemicals and vitamin A. Carrots also offer some fiber and it is low in calories. With a portfolio of all of these nutrients, I would say that carrots are an excellent addition to the diet to help keep us healthy. They are also easy to eat as a snack and they taste good.
Carrot contains lots of nutrients and vitamins, which are very good for health like skin, nails, stomach, and specially for eye. For those who suffer from eye problem they had to eat carrot regularly.
They are good without any reservation that I have ever heard of. Too much vitamin A is bad, but you can never eat enough carrots to arrive at that condition, unless you also take massive doses of vitamin pills.
They are a very good source of beta carotene and helps prevent night blindness also .
