The most effective way is to purchase a small program called iPodsync. It has an option in its Advanced menu to Reset the iPod, ie to remove all entries in the Contact, Calendar, e-mail and any other folder you have. After this you simply resync, again using iPodSync, which, incidentally, will sync with Outlook versions earlier than 2003. With this application you will not need iTunes to sync your iPod. The whole thing is done in less than a minute, and for $11 that's a deal! I do not work for or sell iPodSync; I came across it after many frustrating attempts to delete multiple contact entries.
go to contacts, tap on the contact you want to delete, on the top right corner the Edit button will appear, tap it and scroll to the botton of the page, there is a big read Delete Contact button!

go to the contacts app click the contact that u want to delete press edit then at the very bottom press delete contact
