Soak your meat first over night then when you get ready to barbeque put lighter fluid on the charcoal then let it soak for 10 mins. then light the charcoal with a piece of paper then put the rack back on the grill. then once the fire go down put the meat on the grill and close it. and check on it every 15mins. :)

Sometimes when grilling chicken, it will brown and cook on the outside, leaving the inside not quite done. This happens especially for larger, more meaty pieces of chicken. The best way to be sure your chicken is done on the inside is to grill it until it is beautifully browned on all sides, then transfer it to a pan and place it in a preheated 300 degree F oven for 20 minutes. This usually ensures the center will be done. Smaller pieces may not need to be placed in the oven, as they usually will cook through on the grill.

To test for doneness, poke a knife through the fattest area of the piece of chicken all the way to center. If the juices run out pink, it isn't done. If it is done, the juices will be clear. You can also use two knives in one slit in the chicken to pull it apart a bit to see the center. If it is pink in the center, it isn't done. So, if it isn't done, transfer it to the oven. This will also keep your chicken warm while you grill or prepare more food.
