Soak your meat first over night then when you get ready to barbeque put lighter fluid on the charcoal then let it soak for 10 mins. then light the charcoal with a piece of paper then put the rack back on the grill. then once the fire go down put the meat on the grill and close it. and check on it every 15mins. :)

You can also use two knives in one slit in the chicken to pull it apart a bit to see the center. If it is pink in the center, it isn't done. So, if it isn't done, transfer it to the oven.
