Well, to write fantasy, you need a fertile imagination. Come up with all sorts of new words, lands, languages, species, types of things etc. Now get a plot. Get a hero and possibly get a bad guy. Find a way to make them meet in a final show down, with help from both sides and you've got yourself a fantasy. Oh, and throw a damsel in distress in for maximum enjoyment
Well, it depends on what type of fantasy you want and what characters you want in there. I guess you just write what you feel you want to write.
