The veg also helps to keep the roast off the bottom of the roasting pan so it doesn't 'stew' in its own juices. 25/April/2009 Contrary to the above answer, most websites suggest 25-30 minutes per pound + 30 minutes which would make your 9lb joint 4-4.5 hours rather than the 2.5-3 hours mentioned above. Also the recommended temperature is 175°C (350°F) rather than 160°C (325°F). (Old answer_2 hours) I was hoping people would be more specific with such an expensive cut of meat! Cook to an internal temperature of 125F then let sit 20minutes cut and serve.
