The better question is why would you? Assuming this is a whole uncooked potato then just cut the moldy/mushy part off and cook how you wish. If it's a cooked potato then it's time to throw it out.

It will probably have no effect at all. Most common vegetable molds are not toxic to humans.

In the worst case, it might cause an upset stomach, vomiting, or diarrhea depending on the type of mold, and the individual's sensitivity to it.

If, when you peel the potato the flesh under the skin/mold is sound and white then this is OK to eat. If the potato is grey/brown on the inside then it is not OK to eat.

Assume it is not safe to eat anything mouldy. Just expect to be ill if you do
