You will be very careful when you deciding for the drywall color. You should not check the color when there is too much light shining on the wall. After that you can find color you want for your drywall repair.
Paster of paris is a form of drywall, so I'm unclear on your meaning except possibly you have a wall with plaster over lath and want to cover it with drywall. You can find the studs electronically and go ahead and attach drywall to the face of the plaster with extra long screws. - Personally, I would rather repair whatever is wrong with the plaster and lath.

An "old work box" is an electrical box, usually made from metal or plastic, which is used in remodeling. The box is used for electrical switches, ceiling fans, lighting, cable or computer lines. An "old work box" is installed in to a hole cut into a wall or ceiling and has folding tabs, that when turned grab onto the back of the drywall to hold the box in place. "New work boxes" are nailed into the wall studs or ceiling joists before the drywall is installed. In remodeling it is impossible to nail in a box without cutting a large hole into the wall or ceiling, so the "old work box" with folding tab is used.
If there's any question about whether or not a drywall anchor will hold on the ceiling, the best thing to do would be to find a ceiling joist and use a long screw to go into solid wood. (Use a stud finder to locate the joist.) Hanging on a ceiling is more dangerous than hanging on a wall since things that fall can fall on people or pets. If you HAVE to hang just in drywall, use the strongest anchor you can get (i.e. one that expands like a butterfly after insertion, or the type that flares out like a flower when you tighten it). Your local hardware store can help with what's a reasonable weight limit.
