Bigeye Tuna which has a rich, meaty taste and texture. It is usually sold as fresh or frozen steaks. Bluefin Tuna which is the darkest in color and fattiest of the tuna. It is sought out to be used as a raw product. Skipjack Tunas are the smallest of the commercially important tuna species. It is usually canned as light meat tuna. Yellowfin Tuna which has a mild, meaty flavor. Usually marketed as steaks.
