Whole wheat and rice are staples, as well. This area is hard-working, and need the calories and energy provided by legumes, rice, and starches. Breakfast is very important. They view dinner (evening meal) as the most important meal of the day and it is the largest meal of the day. The main "masalas" (spices) used in Punjabi cuisine are garlic, onion, and ginger. Yogurt is also widely used in cooking, which helps balance the meal, since most dishes are extremely hot (due to chiles).
