\nCream Puff Recipe\n \nThe trick behind all cream puff recipes is the dough. The dough is actually cooked in the pan before it is baked in the oven. The result is a hollow, puffy pastry that can be filled with cream, ice cream, savory mousse, or whatever you like.\n \nIngredients\n \n1 cup plus 6… teaspoons of water (9 ounces)\n \n4 ounces of butter, cut into pieces\n \n1 cup plus 2 tablespoons of all-purpose flour (5 ounces)\n \nPinch of salt\n \nPinch of sugar\n \n4-5 eggs\n \n1 egg beaten with a bit of water (for egg wash)\n \nInstructions\n \nPut the water, butter, salt, and sugar in a saucepan and bring it to a boil.\nOnce the butter has melted, remove the pan from the heat and add all of the flour at once.\n \nPlace the pan back onto a medium heat and, using a wooden spoon, stir the mixture vigorously until it forms a thick batter that pulls away from the side of the pan. This should take about 30 seconds.\n \nContinue to cook the batter for 1-2 minutes more.\nRemove the batter from the pan and put it into the bowl of your stand mixer.\nBreak the eggs into a bowl.\n \nUsing the paddle attachment, mix the batter on low speed and add the eggs one at a time. #Let each egg become fully incorporated before adding the next one. The batter should be smooth and firm.\n \nYou know you have added enough eggs when a dollop of batter lifted on a spatula curls over itself and forms a hook.\n \nPreheat the oven to 450 degrees.\nPlace a sheet of parchment paper on a cookie sheet.\nFit a pastry bag with a number 5 piping tip and fill the bag with the dough.\nPipe 1 ½-inch mounds of dough onto the cookie sheet, about 2 inches apart.\nBake for 10-15 minutes or until golden brown.\nReduce the heat to 350 degrees and bake for 10 minutes more.\nTurn the oven off and let the puffs rest for 10 minutes.\nRemove from oven and let cool completely.\nCut the puffs in half across the middle.\nFill with whipped cream.\nDust with powdered sugar. I personally cannot taste any chocolate in Kahlua. They do have a Kahlua Mocha product. From Kahlua's own website, the flavor combination is thus: "It takes four key ingredients to unlock the pleasure of Kahlúa: rich, shade grown Mexican Arabica coffee, exotic vanilla, luscious caramel and pure …sugarcane rum. As Kahlúa is tasted, a unique combination of flavors is revealed. First comes intensely rich coffee, then come notes of sweet buttery caramel with hints of vanilla; it's warm, deep and sweetly stimulating, beckoning you to come out and play. " (MORE)
Kahlua can be drunk with many mixers. the most common are milk or cola. It can also have vodka added to make some drinks, for example a black Russian is Kahlua, vodka and cola and a white Russian is Kahlua, vodka and milk.
As far as I know there is nowhere in Canada you can buy kahlua especial anymore. Very unfortunate. The other kahlua brands or imitations don't compare because they are all too sweet and have a caramel taste that is disgusting.
Because of the alcohol content, Kahlua has a long shelf life (up to 2 years). Whether it is kept in the refrigerator or on a kitchen shelf, it can grow mold or become sour tasting because of the coffee bean content.
oh, yes. and it is delicious. most drink guides and bartender books have plenty of tasty recipes. like 3 parts coffee, 1 part kahlua, whipped cream... voila!

From the Kahlua web site: Since Kahlúa was estd. in 1936, it has always been made of coffee & rum. This is a natural fit since the sugar cane, the base of rum, and the coffee beans KAHLÃA is made of grow side by side in Veracruz, Mexico. The reason why we communicate this stronger now is that… we want to celebrate our heritage and believe our consumers appreciate authenticity. (MORE)
There are cookbooks that survive from the late middle ages, but they describe the food of the wealthy. We don't have written sources on the exact dishes that peasants were making. Their food was likely simple, and as most could not read or afford books there was little reason to write about peasant …food. We do know a fair amount about the types of foods that they ate, and the type of cooking techniques they used even if we don't have specific recipes. The dietary staples of the peasants were cereal grains like wheat, rye, barley, and oats. Legumes such as beans, peas, and lentils were also important. Animals were kept for dairy and egg production. It appears that milk was usually processed into cheese and butter rather than being consumed fresh. Animals were not milked year around, as the extra feed could not be spared in winter months. Garden vegetables such as onion, garlic, carrots, turnips, and cabbage were common foods. Some meat was consumed, but this was infrequently and in modest quantities. The typical peasant household did not have an oven or separate kitchen. People cooked at a fireplace or central hearth. Soups, stews, porridge, and pottage were the common forms of food. Grains might be made into bread in the village ovens, or simply added to the soup pot. Fruits and tree nuts would have been gathered for use in season. Some fruit was dried for later use. Acorns were also gathered, in theory for animal feed, but in times of crop shortage or severe economic hardship they would have found their way into the soup pot or bread flour. Just because peasant food was simple it does not mean that it was bland. Imported spices would have been beyond the reach of most peasants, or used in tiny pinches by the few who could afford them, but local herbs and condiments would have been used. Familiar table herbs, as well as quite a few exotic to modern cooking flavored foods. Vinegar, mustard sauces, verjuice (a fermented condiment made from the juice of green grapes), and honey were used as flavorings. (MORE)
