meringue (techinically, you COULD make this without the sugar, which would put it in the first category, but I can't imagine anyone EATING it)
Basic cooking methods for eggs include:
1. Fried, such as "sunny-side up" (cooked yolk up) or "over easy" or "over hard" (cooked yolk up, then turned over and cooked yolk down very briefly or until firm).
2. Less common, "basted" (drizzled with fat or oil after frying) or "steamed" (water added to pan during frying).
3. Scrambled or made into an omelet
4. Soft-boiled, soft-cooked or "coddled"
5. Hard-boiled
6. Poached
7. Baked (or "oven baked")
8. Preserved (Asian method of "cooking" by preserving in clay, ash, salt, lime and rice hull for several weeks to months.
The four major egg cooking forms are :
To poach an egg : crack an egg and pour it into hot simmering salted water. You can add vinegar to the water to keep the white from running, and you can halt the cooking of the yolk by immediate suspension in cold water. (Note that poaching also applies to steam-cooking in a similar manner.)
