Because there is no market for it. It would cost more to make it than the product is worth, so a company would lose money by making it. No company wants to lose money, so we don't see pickle ice cream. I have heard (although I have no proof) that Swensen's Ice Cream Factory, does, or at least did, make dill-pickle flavored ice cream.

Hence, though the walls of the classrooms are painted cream - they are not attractive but 'yucky' and repugnant as sour and putrid cream might taste to some. This deft pun on 'cream' serves a dual purpose. While on one hand it paints a word-picture of the school walls; on the other, it describes the children's emotions and their abhorrence for the classroom.
