One recipe is as follows (using great care):
Whip egg whites until they are full of air light and fluffy (like foam from bubble bath)
Carve out a scoop of frozen ice cream
Coat the ice cream in the egg whites
Coat the egg whites in shredded coconut
Deep fry in hot oil for a FEW SECONDS
Serve with a sprig of mint and a dusting of icing sugar
