I'm not sure I understand your question, but as far as rock Guitarists go professionally I think in the 80's Rowan Robertson of Dio was one of the youngest guitarists in professional rock (17 years old when he joined Dio.) -- Youngest confirmed to really play guitar is Frano Zivkovic, at his 3,5 years.
Its kind of hard to answer depending on what you are looking for - are you basing it on degree of success or just the fact that someone was good at the guitar at a young age? Basing it on success and notoriety, Johnny Lang was 13 when he released his first album. George Harrison was only 14 or 15 when he was asked to join a band that would become The Beatles. The youngest proved to really play is Frano Zivkovic at his 3,5 years.
Ethan Bortnick is known as the youngest keyboard player and performer in the world. He began playing at the age of 3, and began composing at the age of 10.
The newborn who received a rattle from his mother. If you mean with any proficiency, you're probably thinking William Crotch or Aimi Kobayashi. Both were performing by the age of 3.
