For the record ... not sure who put this in wildlife but a "Stag and Doe" is a party held before a wedding to raise money for the bride and groom - to pay for the party itself, the wedding, and, hopefully, give them some money to start their new life together - by selling tickets to the event, running games and draws during the party that attendees pay-to-play, selling drinks and the like.
According to this seems to be a custom that is mainly observed in Southern Ontario, Canada (which is, surprise, where I am writing from), the UK or areas in the States close to us.
From what I have been reading (I recently became a groomsman) it is mainly the maid of honour (proper British / Canadian spelling, thank you) and the best man who are responsible for the initial funding of this party; however, the remaining wedding party are responsible for selling tickets / running games etc.
