Because white light contains all the colours of the spectrum and objects of one colour absorb the other colours only reflecting back the colour that they are. This can be shown by the fact that Black reflects back none of the spectrum so no light is reflected back and so appears "black" whilst white reflects back all of the spectrum so it appears white.
