You should ask him about his religion and if it has something to do with him not wanting to date you. Generally, it could be one or a mixture of three things. He's wants to prepare for a mission, he really likes you but doesn't know what to do after you get in a relationship, or he likes you as a friend but isn't interested in a relationship.
I would suggest you talk with him openly about it.
