If you change the suspension geometry (which you did if the shocks weren't the exact same size/grade/damping) then you might have to take it to a professional. There are just too many variables, like Power Steering, steering fluid, brake fluid, brake disks installed properly, ect. Go to someone who knows what they are doing is my suggestion.
the rims may be un balanced if they were a cheap set. but you probably just need to have your tires balanced, any tire shop should be able to do this.

Yes you can install power steering. I have installed it in my 84 pickup. You will need the power steering box and the gear box with hoses. I pulled them off a pickup at a wrecking yard, which is best, since everything is already there and you can see how it is setup.
Rotors may not be balanced, calpiers may be installed incorrectly, tires may be out of balance or mounted wrong, wheels may be bent, steering linkage may be worn out or loose.
