A USDA study found that artichokes have more antioxidants than any other vegetable, including quercertin, rutin, anthocyanins, cynarin, luteolin, and silymarin. Artichoke leaf extract kills cancer cells and reduces their proliferation in many different forms of cancer, including prostate cancer, leukemia, and breast cancer. The flavanoids present in artichokes reduce the risk of Breast cancer. The pulp of artichoke leaves contains a polyphenol antioxidant called cynarin which increases bile flow. Cynarin and another antioxidant, silymarin, may even regenerate liver tissue. Artichokes are a natural diuretic, they aid digestion, and improve gallbladder function. Many people swear by artichokes as a hangover treatment. Ingredients in artichoke leaves reduce cholesterol by inhibiting HMG-CoA reductase. They raise good cholesterol (HDL) and lower bad cholesterol (LDL). One large artichoke contains a quarter of the recommended daily intake of fiber, and a medium artichoke has more fiber than a cup of Prunes.

Yes, artichokes are healthy.

Specifically, artichokes are sources of minerals, protein, and vitamins. In particular, they contain iron, magnesium, manganese, phosphorus, potassium, and zinc as well as vitamins B, C, and E. They also include lutein and zeaxanthin, which particularly help in keeping eyes healthy. They nevertheless may need to be avoided or consumed sparingly by those with blood disorders since they also provide vitamin K.

Are artichokes good for Gallbladder health?

I've heard that indeed, artichokes are good for the gallbladder because they can stimulate the flow of bile and fat from the liver. I think Dr. Oz talked about it recently. I've also read that for people who already have gallstones, artichoke, especially the supplements, could cause the stones to move into the bile duct. But for most healthy people, artichokes are quite healthy, and are high in vitamins and antioxidants, as well as fiber, and minerals like magnesium. They may even help to reduce cholesterol.
