The Torah-Jews were heavily outnumbered by the attacking Greek armies, but God gave them miraculous victories again and again. After three years of struggle, the Greek armies retreated from Jerusalem, and the Hasmoneans (also called Maccabees) entered the Holy Temple which the Greeks had defiled, reconsecrated it to God, and began the Temple service once more. Among other things, they wanted to relight the olive oil candelabrum (Exodus ch. 25), but could only find one day's supply of undefiled oil - and it would take eight days to make and bring some more. Miraculously, the menorah stayed lit for eight days (Talmud, Shabbat 21b), allowing enough time for new oil to be prepared and brought. The significance of the miracle is that it demonstrated that God's presence was still there. The Torah-community was overjoyed, because God's presence meant everything to them. Hanukkah has steps? Hanukkah is a relatively minor Jewish festival -- it's not in the Torah at all, but the commandment to observe it comes from the Rabbis of 2000 years ago. There are three elements to this festival:

  1. The Menorah or Hanukkiah. On each of the 8 days of the festival this is lit after sunset in a place where the light can be seen in order to proclaim the miracle -- window sills are traditional good places for this. The Hanukkah menorah has places for 9 wicks or 9 candles. One is used as the shamash, the servant used to light the others. On the first night, only one of the other 8 are lit. On the second night, two, and so on until on the final light, there are 8 candles. A blessing is said just after lighting the shamash before using it to light the others) -- Praised be thou, oh Lord our God, who has commanded us to kindle the Hanukkah lights (followed by a blessing for the miracle, and on the first night, Shecheanu). Candles are typically inserted in the 8 holders working from the inserter's right, and on each night, the leftmost candle is lit first.

  2. During the Amida and during the Grace After Meals, a paragraph is inserted, Al ha nissim (for the miracles).

  3. During the morning prayer service every day, the Hallel psalms are inserted right after the Amidah. Hallel is fun to chant.

That's it for the minimum observance. There are traditions too, some nice songs like Mao Tzur (Rock of Ages), and eating foods cooked in hot oil in order to commemorate the miracle of the oil. Latkes (potato pancakes fried in oil), Suflagenyot (jelly donuts fried in oil -- particularly in Israel), Oilebollen (dough fried in oil, in Holland) are particularly popular.
