Yes. It can trip a code and illuminate the check engine light. Today's engines are designed to run with a 195 degree thermostat.
it all depends on your thermostat most likely 180 but you canall ways change it out with a hotter or colder one but i wouldn't
A stuck open thermostat would make your engine run colder than normal. You'll see problems like your heater not working. Liquids can not evaporate to the point of loss in a sealed environment. Being that your coolant would run hotter under normal circumstances, this is unlikely.
I would suspect a slow reacting thermostat, or one that is not correct for your vehicle. The thermostat opens and closes to allow the hot coolant from the engine exchange with the cooler fluid in the radiator. When the thermostat sticks or reacts too slowly the temperature of the engine will rise above normal, then drop suddenly as the thermostat opens, then the temperature may dip farther down than normal as too much colder fluid is exchanged than is needed to maintain operating temp.

If the engine is overheating, the thermostat is stuck closed. If the heater is not putting out enough hot air the thermostat is stuck open. Change the thermostat as a normal part of maintenance when changing coolant.
