Yes, but for vampires the saying 'you are what you eat' has special significance to them. As they are un-dead enitites they assume many of the characteristics of that which they eat. The vampire Lestat spent a few decades feeding off of rats and became very much a flighty, furry creature. When he went back to humans he remarked 'that feels much better'.

As for the question, yes, vampires could live on animal blood such as the person above me used the example of Lestat, and also in the book Twilight, the Cullen family live on animal blood. It's just not that satisfying like human blood.
