I suppose you could, but I think you would have to cook them in a liquid, and I'm not sure that's the best way to cook them. Sweet potatoes have such a lovely taste and aroma when they are oven roasted, I don't think I would dilute that, or risk making them mushy, through the introduction of a liquid in the cooking process. Plus roasting them gives you some carmelization of the sugars in the sweet potato, which improves the taste.

I cook potatoes in the pressure cooker all the time. They are tasty and the vitamins are preserved. You can cook them whole, and then when they cool, the peel comes off easily. Or cut them into even-sized pieces.

Put the potatoes in the pressure cooker and add a half cup of water. Follow the manufacturer's instructions. When the steam has built up, lower the heat and set the timer for a third of the time it would take in a conventional pot. I cook potato quarters for ten minutes, and whole potatoes for 15 minutes.
