you can but since the majority of turkey is Muslim, it would be difficult to find pork. you can buy pork from stores but usually it's not served in restaurants.
it is 2010 and you can find pork in restaurants in Turkey but off course not in all restaurants, depends on the cuisine of that restaurant you are going. And also you can buy pork in special super markets, stores. The pork is not the problem to find in Istanbul only the the problem is do not forget your colestrol pills at home.
Buying, selling or eating pork is not forbidden in Turkey. In Islamic beliefs Muslim shall not eat pork as we know. And the Muslim population in Turkey is pretty high. Therefore serving pork in restaurants or selling pork in stores/butchers is not very common. It is a supply/demand thing though. It is not about religion. Turkey is a secular country.
